some very clever sugar-free snacks (2 ingredients or less)

Posted on April 17th, 2012

Some might not call this cooking. Some, of course, might.

Regardless, I do like to challenge myself to prepare food with the least number of steps and ingredients as possible, and using everyday things around the supermarket aisle. Life is smoother with less. And with ingenuity.

I thought these might inspire you to come up with your own. In the spirit of simplicity, I’ve reduced the instructions to a haiku poem (remember these are the haiku rules: three lines of up to 17 syllables and use of a season word). Feel free to supply yours below…

1. Cheesy poppadums

* poppadums

* Parmesan cheese, grated

A chickpea ‘dum

cheese flutters like snow flakes

hit microwave for twenty

2. Seaweed snacks

* Seaweed snack, found in most Asian grocers

Not much more to say

open, eat

for sesame oily sunshine rays

3. hot berry slush

* 1/2 cup frozen mixed berries

* a sprinkle of stevia powder (Natvia)

In a pot blend two

like Autumnal peat and heath

simmer, simmer, simmer

4. toasty water chestnuts

* a tin of water chestnuts (about $1 in most supermarkets, in the Asian food aisles)

* coconut oil or sesame oil (depending on the flavour you’re after)

Drain first, heat next

a golden hue

like summer sun on inside thigh

Please do add any ingenious, 2-ingredients or less ideas you might have…

Hi! I used to eat those seaweed snacks but I discovered they have asparamate and other preservatives in them. Best to check the ingredients before you buy them. I haven’t yet found any that don’t have crap in them. What brand do you by Sarah?

I was reading about this last week Chloe but yet to try – it sounds divine. The recipe I saw had chocolate coconut milk (which I have never seen) but said another option would be to add raw cacao powder to the coconut milk. And when ready, service with berries on top.

I make a slightly diff version – use 2-3 Tb chia seeds, 1/2 cup almond milk, a Tb of cocoa powder and maybe 1/2 sachet/tsp Stevia. It turns into the most gooey, chocolatey chia pudding :) About 1/2 hr in the fridge!

This was fun. I’ve never written a haiku before!

    Coconut toasted
    Golden tint of autumn leaves
    Cinnamon salt dust

So, just toast a cup or so of coconut chips/flakes in a pan until nice and golden. Add a pinch of cinnamon and salt to taste (I use himalayan salt for the extra benefits). It is oh, so good.

as a dessert or when you’re going through cravings…

    - pop one of those new helgas wholegrain sandwhich thins in the toaster (can be expensive but check the catalogues because they go on special for $3 every so often and you can freeze them)

    - spread with unsalted BUTTER (not marg – yuck)

    - mash half a semi-ripe banana on top with a fork (not too ripe because the riper the banana, the more sweet, I think)

    - drizzle some rice malt syrup on top

    - dust with cinnamon

    SOOOOOO GOOD!

    Hi Rachel,

You can actually go one step further and replace the butter with rocitta cheese and omit the syrup altogether.

I do a similar breakfast and use proper sourdough bread, ricotta cheese, banana, activated walnuts and cinnamon. I find the sweetness of the banana enough.

    Cheers

  • Simone says:

Careful with the seaweed snacks. Most of them are loaded with additives, preservatives, MSG, colourings and flavourings- which is probably why they taste so good! The best ones to get are usually found in the Japanese section, and are small rectangular and very thin pieces of seaweed which are salted, but nothing else. Do read your labels carefully!

    Popcorn & coconut oil.
POPCORN, when it’s not slathered in butter and coated in salt, is already known to be a healthy snack food and now a group of scientists say it may even top fruits and vegetables in antioxidant levels.

The researchers said they found great amounts of antioxidants known as polyphenols in popcorn and explained that the substances are more concentrated in the snack, which is made up of about four percent water, while the antioxidants are more diluted in fruits and vegetables, many of which are made of up to 90 percent water.
Microwave popcorn has twice as many calories as air-popped.
I place half a cup of popcorn in 5 tbspns. of very hot coconut oil, put the lid on & shake until the popping stops….all ready to eart, delicious & gluten free.

I’m sure others have already mentioned these snack ideas but here are a few i like:
    1. Roast nuts (almonds and cashews) in a splash of low-salt soy sauce! it makes them all sticky and salty, it’s just delicious. Also sprinkling spice mixes over nuts (i use ground cumin, ground coriander, paprika and a pinch of garlic powder)
    2. Unsweetened natural or flavoured yoghurt with unsweetened frozen berries (i use mixed). Blitz in a blender/processor and add a little vanilla and stevia if needed and it’s just like frozen yoghurt but 10 times better, and you can eat it straight away!!
    3. Cut some carrots into strips and roast until tender, season and they are just like hot chips!! serve with some sugar free tomato sauce/pesto/hommus etc.

Please keep sharing all these great ideas and recipes please!!! :)

Sarah why don’t you use canola, safflower or sunflower or soy bean and corn oil? And wants the problem with gluten? I’m starting to quite sugar but not sure why these other groups are avoided.

Roasted figs with soft goats cheese. Slice figs in half and place on baking tray cut side up. Pop 1/2 tsp of soft goats cheese on top and put under medium grill for approx. 5 minutes until soft. Delish!

Fresh blueberries rolled in cocoa powder.

Banana and almond milk in blender. Whirrrr. Slurp!
